Chef Alan cooks up a storm at Stoke by Nayland

Stoke by Nayland Hotel, Golf and Spa is proud to welcome its new award-winning Executive Head Chef Alan Paton who comes to us after a brilliant career working in many of the UK’s outstanding five-star restaurants and hotel venues.


At our Stoke by Nayland Hotel, Golf & Spa, gifted chef Alan heads up a team of 19 who are each dedicated to providing delicious and innovative dishes, with the freshest of ingredients sourced from quality local producers.

Coming from a hotelier family in Dunoon, Scotland, Alan grew up in a family involved in hospitality and catering, and he has continued to embrace and grow that family tradition.


Trained at 17 with Compass Services, Alan has worked in a large number of five-star establishments including the prestigious Turnberry   the five-red-star Golf Hotel, the Merrion Hotel in Dublin which won three rosette status within a month of opening and the Selsdon Park Hotel in Croydon, at that time the largest privately owned golf hotel in the UK.


The man who boasts he has cooked dinner parties for Richard Branson is now looking to make the Stoke by Nayland Hotel, Golf & Spa’s exquisite Lakeside restaurant a food destination – a destination of choice where people will choose to come to dine, even if they are not residents.

Alan’s ambition is to make the cuisine undoubtedly the focus of every guest’s visit, using the freshest of ingredients.


Says Alan: “Next year I am aiming to bring in a fabulous new range of home-made sauces and produce using local suppliers which can be sold through our speciality shop Pippin – straight from the kitchen.

“Watch out for cookery demonstrations and master classes – even possible residential cookery courses – as the months go on.”

Lakeside restaurant is open for lunch and dinner. Reservations are preferable and the restaurant is open to residents and non-residents daily.

Stoke by Nayland Golf Club scoop national award

Stoke-by-Nayland Golf Club is celebrating after being awarded the coveted national GolfMark High Achiever accreditation which demonstrates excellence and dedication to both junior and beginner's golf. The award means that the club is now nationally recognised for providing excellent teaching and a safe environment for junior golfers.
The family-owned golf club received this Sport England accreditation from the English Golf Union and English Women's Golf Association, after a rigorous assessment programme carried out over several months, looking at the quality of coaching, environment and ethics, and child protection and duty of care.

Helen Tarttelin, County Development Officer for the Essex Golf Partnership, said: "I was very impressed with the whole attitude of the club and it now gives a standard other clubs should be striving to achieve – Stoke-by-Nayland has an excellent structure in place, particularly for young golfers".

Stoke-by-Nayland Golf Club already boasts an exceptional track record in training junior golfers, some of whom have gone on to become top-flight professionals, such as Jamie Moul who now plays all over the world on the Challenge and some European Tour events.

The under-18 Junior team – some of whom now play in the national squad - has also won the prestigious Telegraph National Team Award, beating hundreds of other clubs throughout the UK.

Susanna Rendall, managing director, said: "Much of this success is due to the hard work and dedication of our team of excellent professional teachers and our club staff, together with the great facilities here."

The most recent junior success went to 14-year-old Charlie Sargent, who won the under-16 Suffolk Schools Championship with a level par score. Stoke's head teaching professional Roly Hitchcock has coached Charlie since he was five. Hitchcock has recently been invited to help coach the Essex County junior squad.

Stoke by Nayland Hotel, Golf & Spa is delighted to announce the opening of its fabulous new restaurant, The Lakes, which forms part of a recent £5 million extensive refurbishment and expansion programme.  Overlooking the floodlit lake and with stunning views across the picturesque golf course, the restaurant is the perfect place for relaxing with delicious food and wine, and the added benefit of a stunning Constable Country backdrop.

The interior of the Lakes Restaurant has a very stylish feel, with warm, smoked oak flooring, contemporary dark wood tables and comfortable high-backed, chocolate leather chairs. The walls are adorned with atmospheric black and white photos which capture snapshots of days gone by and local places of interest.  Diners are greeted with a fresh new look which is modern and tasteful.

For dinner at the Lakes there is always a delicious set 3 course menu offered as well as an extensive a la carte menu to suit every taste.  There is also a good selection of wines from all over the world. 

Traditional Sunday lunches have always been popular at the hotel and are offered in the Lakes Restaurant at £16.95 for 3 courses, coffee and mints, or 2 courses for £13.95.  The cost for children under 12 is £10.50.  A special lunch menu is also available every day of the week. 

A new adjoining lounge bar has also just been completed featuring a central welcoming open fire place.  Here you can enjoy a scrumptious full afternoon tea, including a selection of sandwiches, cakes and home-made scones with cream and jam and a pot of tea – all for just £9.95 per person.

JOB SURVIVES LATE CHALLENGE TO CLAIM VICTORY, AND PROS OFFER HIGH PRAISE FOR STOKE BY NAYLAND

England’s Nick Job survived a late challenge from close friend and adversary Carl Mason to win his first tournament of the year – the Weston Homes PGA International Seniors at Stoke by Nayland Hotel, Golf & Spa.

World-class international golf, with a total prize fund of £175,000, returned to Stoke by Nayland in September with the likes of former Ryder Cup stars Costantino Rocca, Eammon Darcy and Antonio Garrido in the field. Carl Mason – winner here last year and the all-time record money winner on the European Seniors Tour came back, while in-form Gordon J Brand was chasing his third title in four events.

It was Job’s fifth European Seniors Tour title and his first success since victory in The Gloria Classic in May 2007. The 59-year-old secured his first wire-to-wire victory with a final round 69 over the Gainsborough Course to finish on 14 under 202 for the tournament - two clear of Mason.

Mason shot a flawless opening round 68 for a three-way share of the lead with compatriots Jeff Hall and Nick Job. He carded four birdies to continue the recent renaissance that has seen him finish in the top 10 in each of the last three tournaments

Mason commented “It is great to return to Stoke by Nayland, and the course is looking fantastic – in fact the greens are the best we have putted on all season.  The bunkers are also perfect for professional golfers – lovely and firm - and I would suggest that other clubs come along to Stoke to learn a few tips from the green staff here.”

Mason had closed to within one shot going into the final hole of the tournament, but a birdie from Job on the last sealed the win.

“It’s a great win to beat Carl, and to finish with a birdie at the last on such a tough hole is only a pleasure,” said Job, who collected a cheque for £26,250.

“The course was in brilliant condition and these have to be the best greens in the world. So much so I want to take them home with me!  I’m really looking forward to coming back next year.”

Mason carded his third successive 68 of the week and earned £17,500.

Scotland’s Bill Longmuir, who began the week contemplating pulling out with a bad back, fired a third successive 69 to finish third on nine-under par 209 and earned £12,250.

The tournament also saw a sighting of that elusive bird – an albatross – England’s Tony Charnley landing a two at the 553-yard par five 14th!

The Stoke by Nayland Hotel, Golf Club, Spa and purpose-built Conference Centre has recently completed a major expansion and refurbishment programme which further secures its position as the finest venue of its kind in East Anglia.

Fifty new air-conditioned, contemporary-style bedrooms have been created in this family-owned hotel, bringing the total to eighty. All the bedrooms offer flat-screen satellite TVs, free WIFI and stylish granite ensuite bathrooms.

A brand new two-storey glass-fronted Golf Clubhouse and upstairs Gallery Bar, together with outside terrace areas, have also been completed, which offer breathtaking 180 degree panoramic views over the lake, 1st tee and both 18th tees and greens. Two full-sized snooker tables are situated upstairs behind the Gallery Bar. This is all complemented with a new 180-seat restaurant, golf pro shop, hotel lounge area, additional function suites and golf changing rooms, which have all have been skilfully incorporated into the existing facilities. A new retail shop "Pippin" has also been opened, selling a tempting selection of wines, delicatessen foods, fresh local produce, gifts and ladies golf and leisure wear.

Other on-site facilities include a state-of-the-art Spa and Fitness Centre, squash, driving range, golf tuition, pro shop and fishing.
